How does one group categories in Quicken for Mac 2019? Is this a feature planned for a near-term fut

I'm not exactly sure what you mean here, but QM2019 does have the ability to define subcategories of categories, sub-sub-categories and so on down to at least seven levels. Probably more.
To add a subcategory to a top level category, open the Categories window (menu Window > Categories). Select (single click) the category to which you want to add a subcategory, then click the plus sign at the bottom of the window and choose "New Subcategory...".
You can also arrange categories in this window by drag and drop. If you have a top level category that you want to be a sub of another, just drag and drop it on top of that other category. It will become a subcategory. If you want to make a subcategory into a top level category, drag it out between two top level categories. If any of this creates a conflict because two have the same name, you will be asked if you want to merge them.
