Where is the drag-to-learn function documented?

I've read a couple posts about a technique to edit a transaction in QMac by creating a new transaction with the desired payee name and category and then dragging the original transaction on top of it. Is this function documented anywhere and what does it learn?

Normally, you'd have a manually entered transaction with correct Payee and Category recorded first, then you download new transactions.If Quicken doesn't automatically match the downloaded transaction to the one you entered, you can drag the downloaded transaction over the manually entered transaction. This should make Quicken remember what to do next time this Payee comes along.More details should be available in the links below.

QMac17 never seems to learn my categorizations. When my CapOne credit card gets downloaded to Quicken, I have to change all the assumed categories manually every month. I thought Quicken was supposed to learn my categories and follow them.0
