Why will Quicken Mac 2019 not show/allow some categories in register window?

See my earlier discussion (now closed). The recommended solutions haven't worked after all. At the next download, Quicken Mac once again changed the category on all my savings account interest entries from "Interest Income" (a category I had created) to "Uncategorized". And Quicken Mac has also reverted back to NOT showing "Interest Income" as an option for Category in the drop down menu if I try to edit any of the affected transactions. Why will it not let me categorize these downloaded transactions as I want to????

The download coming in as uncategorized is not surprising, because there are some things currently broken with auto-categorizing that we're hoping (and expecting based on comments by the Mac product manager) to see addressed in one of the next couple updates.
I'm still puzzlked why you can't select the category manually, however. Is this in a Banking account (e.g. checking or savings or similar) or an Investment account? If you create a new transaction, enter a dummy Payee name that doesn't exist in your database, and then tab to the Category column, is your Interest Income category available in the drop-down list? If you got to Windows > Categories, scroll down to Interest Income in the list, and double click it, does it look like this...
