How do I write a check and include the vendor address for window envelopes?

I usually use Quicken 2019 R21.16 build 22.214.171.124 to pay online, but occasionally, I need to print and mail a check. This used to simple. I tried unchecking "Use Online Bill Pay" and I Enter the Payee and amount onto the check. When I attempt to Edit Address, I am presented with a dialog box to Edit Online Payee! This fails to accept my entry because of an empty "Name:" field (which I cannot change).
