I cannot edit the end date of mortgage.

I refinanced a previous mortgage to a 15 year mortgage which extended the end date. However, Quicken still is still using the previous end date and now expects a balloon payment on the end date. And on a related note, why, when I edit the original length, does it modify and change previous entries. That's history it should not touch anything before the current date.

Instead of editing the original loan's detail, I suggest you create a new loan and use the proceeds to payoff the original loan.1

I could but I shouldn't have to. The mortgage is with the same financial institution for the same property. I prefer to have one loan that has all of the history versus multiple loans in quicken.0
