enter transaction category: cost of goods and sales tax

new to quicken I have quicken deluxe, there has got to be a way of running my small business off this. I'm not sure how to enter a sale such as cost of goods and how to put the tax on in the same transaction.

Quicken Deluxe does not have any features for small businesses, e.g., Customer Invoices (with Sales tax tracking), predefined categories for business income and expenses with Schedule C tax line items, etc.
I recommend you upgrade to Quicken Home, Business & Rental.
    Follow this procedure https://www.quicken.com/support/how-do-i-add-additional-features-quicken-2012-and-newer
No reinstallation required. After you have completed the upgrade and paid the upgrade fee, restart Quicken and click Help / Check Membership status. The HB&R features should now be unlocked and usable.
