to wait several minutes for the update to complete. I only want to update when I click on the update button. Can this be done?

Quicken won't update the actual accounts unless you manually invoke doing such. I suspect that it is, however, automatically updating the stock quotes which happens about every 15 minutes. This download can take some time depending on how many securities you have setup, internet connection, etc.
You can check in Quicken:Preferences to verify:
If you have this option disabled, it will still update the quotes when you actually update your accounts.
