I used to see a full year of bill and income reminders, now I only see 2 days. Is there a way to change it back?

Where exactly are you looking at to see your reminders?
If it's the individual account register you're looking at, check your selection in the register:

If you don't have the clock icon click the gear icon and use the Reminders to show … selection.
