how do I adjust when upcoming payments appear in my register? (Q Mac)

I just switched over to Quicken for Mac after having used the Windows version for over 30 years. I can't seem to locate how to allow upcoming transactions to appear in the register at a specified number of days before the payment.

There’s a little clock symbol in the upper right corner of the register, click on that to select how far into the future the register will show transactions.

You can set each account register individually to different settings. If you want to set all of them to the same time frame you can select the All Transactions register - setting that one will set all registers to the same setting.
