Please tell me how to "disable" clearing the valid auto-categories for my downloaded transactions after I "fix" the payee to the correct name?

Before following any of the troubleshooting steps below, I recommend creating a backup of your Quicken data file.
Based on your description, it sounds like the issue may be related to Memorized Payees. The Complete fields using previous entries setting under Data Entry and QuickFill may be enabled.
