I have the latest version of Quicken for Mac 2019 that I keep my personal financial information.

I also keep the books for a non Profit org. I was keeping both on Quicken 2007 for Mac. Can I keep both sets of books on one Deluxe subscription? If so how do I convert the second file from 2007 to 2019

Yes. File:New and convert the other file into that. Repeat for as many files as you maintain within Quicken.
File:Open Recent will allow for a quick way to jump between files.5
