I've entered several checks in the transactions register, selected them, and then selected file/print checks. A "print checks" window opens. but it's empty. What am I missing?

Since you have already entered these transactions, you will need to change the check number to PRINT. This will allow this transactions to be printed on checks when you File:Print Checks.
In the future, command+j (or Transactions:Write Checks) will create a new printed check. This will take you to check entry mode where you can enter details/address, etc.
