How can I write checks with the same dates and dollar amounts with a list of payees?

If these are recurring events, e.g., monthly payments or even once a year events, you can set up and use Scheduled Reminders for each of these events. Set up with "Automatically enter the transaction in the register [xx] days in advance", these reminders will appear in your register at the desired time.
If you are printing these checks with your PC's printer, please remember to select "Print checks with Quicken" as you set up the reminder.
