I recall from earlier versions of Quicken that I could "play what-if" scenarios.
I would enter the loan balance, interest rates, and payments (per month?)
I would enter different payment amounts and/or interest rates and then show an amortization list with the balance at each payment and payoff date.
I don't see that in the Planning Tools. Possibly the tool's interface is different from what I remember.

I can't recall if it is available on all "tiers" (premiere, starter, etc.), but it would be available under the mortgage "What If" button at the top:
