Unless you are using Premier or higher you will not see it. It is not available for Deluxe or Starter. Quicken has admitted that the documentation is lacking and that it will be updated at some point.1 -

The Portfolio Value report shows the ticker symbol. You can also customize the portfolio tab views to show the ticker rather than security name by going to (at the upper right) Options > Customize…1 -

Just go to the Security List, find Sony and edit it to change the ticker from SNE to SONY. It will update everywhere in Quicken. That's all you need to do2
