How do I delete a category?

Trying to find a work around to this frustrating categorization issue. I have deleted categories that I do not use/want, but they have reappeared! There are so many categories - it makes categorization useless. For example, a restaurant we at ate recently auto-categorized as "alcohol and bars" as a sub category of "food and dining".
How do I get rid of categories or sub-categories that I don't use?

Are you deleting the category from the Categories window (menu Window > Categories)? Do the categories only re-appear when newly downloaded transactions are auto-categorized?
Personally, I enter all transactions before I download/match, so I don't see this issue.
There is a known issue with the quality of auto-categorization that the product manager has stated they are working on and will be addressed in a soon to be released update. Hopefully that will help.
In the mean time, you can try to toggle the setting for "Automatically improve the quality of downloaded payee names and categories" in Preferences > Connected Services, and see if that helps.Quicken Mac Subscription; Quicken Mac user since the early 90s5

I'm deleting the categories through the categories window. And yes, they only reappear when I download new transactions. It doesn't change any of the ones that I've corrected, but for new downloads, it adds back categories that I've deleted and automatically categorizes them with the new/formerly deleted categories. . .
