How do I stop Quicken from automatically assigning categories on download? (Q Mac)

Seriously? I WROTE BOOKS ABOUT QUICKEN FOR 10 YEARS and I can't figure out how to turn off this annoying feature. What's worse is that it's only doing it on one of my Quicken files and not the other.

One of the suggestions that I have read here in the Community is to
- manually record a correctly named and categorized transaction in your account register BEFORE you download the next batch of transactions from the banks and credit cards.
- After the next download you should now have two transactions in your register: The manually recorded one and the freshly downloaded one.
- Drag the downloaded transaction over the manual register transaction. This should "teach" Quicken about Payee Names and Categories to use for this particular transaction, next time the same Payee Name is encountered.
