I already can sub on one field in a report, can I do a subsub within the first sub?

QWin reports can show sub-subcategories and their subtotals. I've blurred my numbers, but note that there is a bold subtotal for Utilities:Gas. This is from the Spending by Category report.

[Edited] Quicken reports generally only support one level of subtotals, but you can can have multiple levels of subcategories with subtotal.
