Select the Brokerage account in the sidebar
Click on Settings at the lower right
Change the account "Type" popup to the desired Retirement investment account
Click Save to confirm.
This will change the investment account to a retirement investment account.

WIth the latest update of Quicken for Mac (6.0.1) this method no longer works. You must deactivate the account for downloads, then reactivate taking care to choose the correct type account during the initial connection.
