Automatic entry of bill in register

I just switched from Quicken 2011 for Windows to the current Quicken for Mac. I created by bill "reminders". I set them all for manual entry, that is, "I pay the biller directly." Under "Mark as Paid" I set some for automatic and others with the other options. Regardless, they are entering into the appropriate register/account 31 days before they are in fact due. In the earlier windows version, you could choose when to enter the bill (or income) into the register. Is that option available in the current Mac version? Is there a way to change when a bill enters the register?

Yes, there is. Edit the account (either right-click on the account in the account pane on the left or click on "Account" and then "Settings" from the menu.
Then change settings as shown below. Unfortunately, you'll have to do this for each account individually.
