Click on the securtiy
Click on Edit Security Details
Pick a different type.

If you want to record the purchase of a security, you need to add the security to your Security list, create an investment account with an appropriate type (IRA, Brokerage, etc) if you have not already and then enter a Bought transaction if the investment account.
