You just use it, but to minimize any issues, I would disable the network adapter so that Quicken won't have issues trying to "phone home".

Aside from turning off your network connection, you should:
- Disconnect ALL accounts using EWC (including any hidden ones)
- Turn off AutoUpdate
- Turn off Mobile Sync
- Turn off Alerts Notifications
