I am not sure when this happened since I dont edit my categories on a regular basis.
But a couple of days ago, I selected my categories because I wanted to make a couple of changes. In doing so, I noticed that after selecting categories from the window list that they are missing! I have attached an image to show what I am seeing.
Currently I am running the most updated version (Version 5.15.2 (Build 515.33015.100).
macOS 10.15.3

I don't think they are missing. I suspect you have accidentally chosen to only show unused categories.
Go back into the category list and click on the gear icon at the bottom. Unselect the option to only show unused categories. I believe all your categories will now show.

Perfect! That was it. I looked and looked before posting this message. I knew it
was going to be something simple.
