Assign category based on selected words in payee

I'm going through months of transactions assigning them to categories. One time when I entered a category and selected Save, I got a dialog box that allowed me to auto assign a category based on words in the payee that I selected (clicked on in the dialogue box). I want to do that again (for example 'Prime Video nnnn' where nnnn is a series of unique numbers and I select only 'Prime Video'), but I can't find how to do that. Can someone tell me?

Also, is there a way to assign a category to multiple transactions from the same payee? Sometimes I am asked if I want to, which I, of course, choose. But sometimes it doesn't ask me. Not sure why it does that.

What you are looking for is Memorized Payee. If you do F1 in Quicken and do a search, you will see how to setup and maintain.
