You can hide them in Security List, but cannot delete them if any transactions exist in a register.

Assuming that you are using a version of Quicken for Windows and your issue is with the Investing tab's Portfolio viewClick the Options gear icon and remove the checkmark from Show closed lots.
This will remove all securities which you have sold and no longer hold any shares for from the list.If this does not answer your question, please provide more details.
