I don't know of anyway that you can make a change like that other than to create a new Cash account, move the transactions from the Checking account to the Cash account and then you can delete the Checking account.
If what you want to do is to change where the Checking account shows up in the right side bar accounts list and in Account List you can go to the Display tab of the Checking account Account Details and change the Intent from "Spending" to "Savings", "Retirement", "Investment" or "Asset".  While that will change where the Checking account shows up in that side bar and in Account List it will still be a Checking account.

Do you normally like to reconcile your Cash account (while it's still a Type = Checking account register)?
If you do, keep it as is. A Type = Cash account cannot be reconciled like a checking account. All you can do is a simplified "Update Cash Balance" type action to adjust the register balance to the amount of cash you have on hand.
