How can I move to Quicken without losing years' worth of transactions and categories that I have in YNAB?

Looks like the only I can see is to export your transaction to a CSV file and then use the free ImportQIF (
QuicknPerlWiz - Use ImportQIF to import transactions into Quicken
) to convert to QIF.
