No automatic setup of standard chart of accounts

I am setting up a chart of a accounts for two simple business. I only want a few income and a dozen expense accounts. How can I setup a company without the hundreds of accounts that Quicken adds? Need to have inventory item to track and cost mileage against each invoice for service rendered.
