How do I get the totals for each payee for 2021. (have the quarters but not the whole year)

Have you tried Reports > Summary > Payee Summary by Year*? Click Edit, set the date range to Last Year, and that should  be the report you describe: all Payees for 2021 with the amount paid to each.

The other way to generate this report: Reports > Create New Report > Summary > Row=Payee, Column=Time, Time Interval=None. Click Continue to Customize, set the date range to Last Year, and click OK.

Thanks- the first worked. Used older quicken for 20 years and not so used to this one.
