How do I change the rate for items in the invoice?

For a temporary change just overtype the Rate field in the invoice data entry form.

For a permanent change (e.g., in the image above, Widgets 1x1 changes from $10 to $11 per item) click the Item field in the invoice data entry form (item 1 in this example), then click the "Edit ▾" button. In the Edit Item popup dialog make the change and save it.
Once in the Edit Item dialog you have access to all the other stored Item definitions to make additional changes. This list is also available from the Business tab or the Menu Bar / Business. Click Business Actions / Invoices & Estimates / View all invoice items.
