I want to use the transaction (aka purchase) date and not the posting date

On my credit card's website I can see that for each transaction there is a purchase date and a posted date. They are usually 1 to 3 days apart. In my quicken register I would like to use the date of the purchase. That way I can export the data and analyze by behavior on Saturdays vs Tuesdays etc. How can I setup my downloaded transactions to use the transaction date as the date that is put in the "Date" column if I "Accept"

You can’t. Quicken gets what the CC company sends which is commonly the posting date. Perhaps your CC offers that option, but I doubt it.

I manually edit the date of each downloaded transaction to be the transaction date.

As an alternative, you can still do it the old fashioned way:
Record each transaction in Quicken as it occurs, with the desired date, payee name, category, memo, etc.
When the transaction downloads a few days later, Quicken will just simply match the downloaded data to the already existing register transaction, without making any further changes.
