How do I prevent overdue reminders from disappearing? As soon as they've been overdue for a couple of days, they automatically cycle off until next month resulting in an increased risk of missing the payment and paying a past due fee.

Past due reminders should always remain in the queue and be visible as such.

In an account register, sorted by Date, they will show as a bold transaction on the past Due Date. That means, they can roll off the top of the register view.

In other views like the Manage Bill & Income Reminders views, the Projected Balance views, the Bill & Income Reminders tab at the bottom of the register, etc. the overdue reminder will always be present. And the next instance of the reminder will pop into view as soon as the "Remind me [xx] days in advance" goes into effect. You do need to process the overdue reminder and either pay it or skip/ignore it in order for the overdue instance to go away.
