I have a LOT of unused categories and I would like to generate a list of those I haven't used over the past year or few years.

Assuming you are using current QMac, you can see a list of unused categories by opening the Categories window (menu Window > Categories) and changing the popup menu at the top to "Unused".

I don't know of a way to automatically generate a straight list of used categories that have not been used in a given timeframe. But here's a manual way to get close: Generate a Category Summary By Year report (under Popular reports). Set the timeframe to All Dates. Look at the columns for the most recent couple of years. Any entries of $0.00 would mean that the corresponding category was not used in that year.
