Is it possible to set up investment accounts (e.g. broker, RRSP, TFSA and Other using dollar values only? I do not wish to track ticker symbols, number of shares etc. for each investment.

Are you saying that you want to only have a dollar amount for each of these accounts without any details?  If so, what you could do is create a made up security for each account and just update the "price" of that security with the dollar amount for that account when you wish.  So for example, if you have a brokerage account you create a security called "Brokerage Account" (or any other name you wish) and add it to that account with 1 share.  Then update the price of that 1 share to be the total value of the account per your broker.  You can do the same for the other accounts as well with unique securities for each.  Note that if you need to set up these accounts in Quicken make sure you select to set up a manual account rather than an online connected account.

The closest other option is to use Simple Investing option but you would still need to track each security, only without detail transactions.
