Can I set default category for part of a payee

Amazon always uses a different payee for downloaded transactions…such as AMZN Mktp US*NC6IG3S93 or AMAZON.COM*301256MD3 AMZN for example. Can I set a default category for all transactions downloaded with payee Amazon* for AMZN*? Or set a default category for AMZN?
