The bills tool display shows bills coming up in 7 days as default. How do I change the default to 30 days?

That's a known bug which has been discussed many times here in the Community.
It's taking a long time for the programmers to fix it. So, patience please. They'll eventually get a round tuit. 😉

Note that the "Due in" setting in the Stack view is sticky, i.e. it is remembered if you exit and restart Quicken, but if you choose the Due Date option, it reverts to 14 days each time you start Quicken.

Most bill and income views have a pulldown for number of days to view.

Yes but it doesn't stay as default. No big deal, older versions when you changed the drop down it stayed as default view
