Why is there a reference to the "First Bank of the Coiled Physique"?
Version 7.10.0 in the All Transactions view.
See screenshot below. Funny, but this is the first time ever seeing this.

Lol, that's placeholder text that we replace with the actual FI name (or blank, for All Transactions). I don't know why it would ever be visible. Fun easter egg!
That placeholder text has existed as long as I can remember. I'll ask around to see if there's a story behind it! Personally, I think it's because our lead Quality Assurance engineer is so buff, so one of the programmers (not me!) added it as an homage to him. The text also has characters with ascenders and descenders so it's good for layout purposes.

I closed Quicken and re-opened it and things are back to normal. This is very strange.

At first I didn't see this, but after switching back & forth between the Spending and Income tabs it appeared. Probably some kind of placeholder text behind the scenes as an inside joke that isn't always getting turned off like it should.

The team had story time today at our standup meeting! The FI name is a reference to a [non-Quicken-related] article that used "coiled physique" when describing the aforementioned lead Quality Assurance engineer. It's a fantastic term (and an apt description of said engineer) and the article was the top Google hit for the search "coiled physique" for a long time. (It's still on the first page!)
