When I download transactions from Quicken, it always shows up in one category called chiropractic. I've used the memorize payee function, but it doesn't work. The next time I download, the same problem occurs. If I download 20 transactions from 8 different categories, they always are categorized chiropractic

If these transactions are also stored under the same Payee Name, then I would assume you have a Renaming Rule running wild, assigning the same Memorized Payee List entry (the one with a category = chiropractic) to all transactions. Delete this Renaming Rule or define it properly so it only applies to new transactions from your chiropractor.
