Wow! Yes, that looks like some kind of GUI/refresh problem.

You should submit that using Help → Report a problem.

For here what I would do to document it is just screenshots of the register with before and after, for each of the steps that show how Quicken changes that past transaction and then refresh makes it appear correct again. Your video probably shows a bit more than you want the general public to know.

I think anything that refreshes the register would have the same effect such as going to another register and back.

Just as a quick summary, for others, when @Dave521 changes a transaction's category (and sometimes memo) Quicken is changing another older transaction to the exact same values. If he sorts the date one way and then back the transaction that was changed when it shouldn't, is back to the correct values.

On your comment about sometimes a payee gets the wrong category. For that I notice that you have "automatic memorized payee" on. This something that I turn off. It might be good for when you start, but after you get most of your payees memorized it can cause problems. And then I use Ctrl+M to memorize a new payee when it comes in. The problem is that Quicken allows memorizing multiple categories for the same payee, but when downloading there isn't any absolute rule of which will be picked. For payees that you want to be automatically categorized on download you should ensure that there is only one payee entry, and that it is locked. The locking means that if you download a given payee and for this instance you want change the category, but not for future instances of the payee, the locking prevents Quicken from creating a new memorized payee entry.
