I manage my father's bills and accounts and would like to create a customized view that shows only his accounts (checking, credit cards, etc) and bills. Currently, it seems all I can do is use the generic account types in Quicken.
Why can't you click the GEAR icon, to the far right, and then click "Customize View" and do exactly what you're asking?
Are you maintaining your father's accounts together with your accounts in the same Quicken data file?
IMHO, if would have been better if you had kept those accounts in a separate Quicken data file. This way, all your father's data, reports, budget, tax views, etc. are kept totally separate from your data. It's easy to switch between Quicken data files.
I'd also like to mention that there is a new product now available,

I have no experience with this new product, but I'd like to mention it. It might apply to your needs.
I concur with @ukr. Since your Father, presumably, files a tax return that's separate from yours … his Q data should be in a separate file.
And with his data in a separate file, you don't need that view. His accounts would be in the Account Bar that you can park on either side of the screen.
I have 3 files that I regularly bounce between, me & wife, a club were I'm the Treasurer, and "test", where I mess around with things in Q.
Switching between files in Q is as simple as clicking FILE, and then clicking on which file you want to open from the list at the bottom.
