Only 1 or 2 of my accounts got messed up, and I don't want to restore all of them so as not to lose all data entered since the last back-up. Is there some way to do this?

How old is that prior backup? Because a backup functions on an entire-file basis. And restores on the same basis.
SO, no you can't restore specific accounts.
What you'd need to do is restore to a DIFFERENT file name, export the accounts from that file, and import them into your current file (after having backed it up).
THEN, you'd need to deal with any transfers to/from those imported accounts.
IF your prior backup is less than about 90 days … and if you download into it, you can probably re-download transactions since that backup and you'd only have to deal with manually input transactions.
I am exploring other options to fix this. I may yet try your suggestion.
