Why do transactions categorized under a hidden or deleted category still appear in reports and how do I permanently remove those categories so report filters no longer include them?? THanks in advance!

"Categories" in investment accounts are directly, and tightly, tied to Investment actions. SO, you can't just leave out, for example, _DivInc, without removing all dividend transactions also.

Examples of what you're experiencing would be helpful.

Is there any trick to hide those categories in reports but still keep the transactions??

Any report can be customized as to what categories, accounts, payees, etc are included.

SO, just create the report as you want to see it and then Memorize it. For future uses, you'd just need to manipulate the dates.

But note that your reply is a bit confusing. If you exclude _DivInc from the selection, there will be no Dividend transactions in the report. They'll still be in the account, but not in the report … if that's what you're seeking.
