Worked at a company that included a company stock fund in the 401k. Each mutual fund share is not equal to one share of stock.
Is it possible to account for this by editing the details of the fund?

If you are not downloading transactions from the 401k provider, you can create a mutual found type security called "Company stock fund" or whatever. Leave the ticker blank and un-check Download quotes in the security list.

If you are downloading transactions, hopefully the fund comes down with a name of its own and you can use that rather than your company's name and ticker
