Unfortunately, Quicken for Mac only supports budgets for either 1 month or 12 months.

The question is about Projected Balance not budgets. And even in this context, there is no way to go beyond 12 months at this time. It is one of the options requested at the following link.

You can add your VOTE to Improve the Bill Reminders Graph (aka Cash Flow Forecast or Projected Balance).
