The default location is:
your user Library>Application Support>Quicken>Documents

To get to your user Library, in the Finder hold down the Option key while you select Library from the "Go" menu. (The Library folder is hidden by macOS by default.)

You can change the location of your Quicken data file at any time using the File>Move To… command.
