I don't know how to get SoFi Lending to show up on my list of accounts

It doesn't appear SoFi supports Quicken; I don't see SoFi in the list of Financial Institutions which support Quicken Mac. So the answer to your question is: contact SoFi and ask why they don't support Quicken Mac.
