how do you backup and save a year's worth of data
in quicken and erase it from the ledger?

Look at Year End Copy (File menu), but it is highly suggested that you don't since you will want to see the old data in the future and going back to the archive file, if you can figure out which one, is a real hassle. Also, merging the files back together is next to impossible and you will never be able to run a Networth report over time if the data is in yearly files.

or do you also have any kind of investments...I just did it for grins - to see what the results looked like.Yes, it does keep all the investment account history - nothing is deleted.
Yes, it does delete banking history prior to your cutoff date - EXCEPT for certain items, so it depends on your activity...
