Does Quicken provide the ability to edit multiple categories rather than one-at-a-time?
If so, how is it done?

Could you provide an example of what you're looking for?

Are you talking about changing the category on multiple transactions at once? If so, it's pretty easy, with a large caveat. Select the transactions you want to change, select Transactions > Edit (or Command-E), and in the Transaction Info box which pops up, enter the Category you want and click OK.

The caveat: this works on transactions without splits; it does not work on categories in split transactions. That's a significant shortcoming, and one I hope they will fix one day, but currently if you want to edit the category in transactions with splits, you have to edit them one at a time.
