I have unchecked the box for synching with the cloud, Will that also delete my previously synched data?

No, it will not. And which are you referring to the data in your Quicken Desktop data file or the data in the Quicken cloud dataset?
To remove the data in the Quicken cloud dataset you would have to create another Quicken Desktop data file with Sync to Mobile/Web on and then go to Edit -> Preferences -> Quicken ID & Cloud Account -> Cloud accounts associated with this Quicken ID (x), and on that dialog you can delete the cloud dataset for the original Quicken Desktop data file.Signature:
