how can I change categories on multiple entries at once? (Q Mac)

Select all the transactions; if the transactions are in more than one account use the All Transactions register. Then right click on one of the selected transactions and select Edit Transaction to bring up the Transaction Info window. Enter the new category in the Category field, make sure the box to the left of the category is checked, and click OK.

Note that Edit Transaction for multiple selecte transactions, as described by @Jon , only works on non-split transacitons. If some of the transactions you want to edit are in splits, you unfortunately have to edit them individually. This is a significant shortcoming in Quicken Mac.
